Favorite Fall Recipe: Pumpkin Chipotle Sloppy Joes


1 lb lean ground beef
1 Tbsp olive oil
1/2 med onion, diced
3 to 4 cloves garlic, minced
1/2c pumpkin purée
2 Tbsp tomato paste
1 chipotle pepper in adobo sauce (diced pepper, plus 1 Tbsp sauce)
12 oz pumpkin beer (I used Shock Top Pumpkin Wheat), minus a swig of course! ;)
1/2 tsp cumin
1/2 tsp smoked paprika
1 Tbsp brown sugar
Sea Salt to taste


In large skillet, brown the meat over medium, stirring occasionally to break it up. Drain meat and transfer to a bowl or plate. Set the meat aside & keep warm. Add olive oil to skillet and add onion once oil is hot. Sauté until translucent & tender. Add garlic and stir to distribute. Add beer to skillet and allow to reduce for a minute or two. Add remaining ingredients and stir frequently to combine. Once the sauce has thickened a bit, add the meat back & simmer for 10-15 min on low heat. Serve on your favorite sloppy joe vehicle...warmed buns (we used pretzel buns!), baked potato or open-faced over toast.
